Pickled Queen Garnet Plum Slices

Sweet, tangy and gently spiced, these pickled Queen Garnet plum slices add a vibrant burst of flavour to rich dishes, cheese boards and roasted meats.

Method

  1. Wash the plums, remove the stones and cut into thin wedges.
  2. In a small saucepan, combine vinegar, water, sugar, salt, cinnamon, star anise and peppercorns.
  3. Bring to a gentle simmer until the sugar dissolves.
  4. Place the plum slices in a clean jar or container.
  5. Pour the hot pickling liquid over the plums until fully covered.
  6. Allow to cool, then refrigerate.
  7. Leave to pickle for at least 2–4 hours before serving.
