Decadent plum tart

Queen Garnet Plum Chocolate Tart

A decadent dark chocolate tart layered with silky ganache and topped with jewel-toned Queen Garnet plums, a stunning celebration of the power of purple.

Method

  1. Prepare the base
  2. Grease and line the base of a 23 cm tart tin with a removable bottom.
  3. Combine crushed biscuits with melted butter, then press evenly into the base and up the sides of the tin.
  4. Chill in the refrigerator for 20 minutes to set.
  5. Make the filling
  6. Place the chopped chocolate in a heatproof bowl.
  7. In a small saucepan, heat cream, sugar, and vanilla until just below boiling point.
  8. Pour hot cream mixture over the chocolate, let sit for 2 minutes, then stir until smooth.
  9. Add cubed butter and stir until glossy.
  10. Assemble the tart
  11. Pour the chocolate filling into the chilled tart shell.
  12. Smooth the surface and refrigerate for at least 2 hours, or until set.
  13. Add the plums
  14. Arrange sliced Queen Garnet plums decoratively over the set chocolate filling.
  15. Brush gently with warmed jam to glaze and give a beautiful shine.
  16. Finish and serve
  17. Dust lightly with cocoa powder or sprinkle with dark chocolate shavings.
  18. Garnish with mint leaves if desired.
  19. Slice with a hot knife for clean edges and serve chilled.
