Queen Garnet Plum Purée

Silky Queen Garnet plum purée with honey and lemon, bringing bright flavour and colour to savoury dishes.

Method

  1. Roughly chop the plums and place in a small saucepan with honey and water.
  2. Cook over medium heat for 8–10 minutes, stirring occasionally, until the plums soften and break down.
  3. Blend with a stick blender or in a blender until smooth.
  4. Stir in lemon juice and salt to balance the flavour.
  5. Pass through a fine sieve if a smoother texture is desired.
  6. Chill before serving.
  7. To use
  8. Spread onto a serving plate, add creamy labneh, drizzle with olive oil and scatter fresh mint. Serve with crackers.
